Fresh butternut pasta is the perfect example of a simple, delicious recipe :) With just two ingredients - butternut puree and flour - you can make an easy and original homemade recipe, without the need for sophisticated equipment. Butternut, with its naturally sweet sweetness, gives the pasta a soft texture and a pretty golden color that makes your mouth water just looking at it! You can accompany them with a simple drizzle of olive oil, a little Parmesan or even a knob of butter for maximum flavor ;-)
Remove butternut seeds with a spoon.
Score the butternut with a knife.
Season with olive oil, salt and pepper and place the butternut in the oven for one hour at 370°F/190°c.
When cooked, remove the flesh and blend with the flour to form a paste.
Wrap the dough in cling film and refrigerate for 30 minutes. *If your dough is a little sticky, you can flour it a little to make it easier to handle.
Bring a large pot of water to the boil with salt. Cut the pasta with a chisel over the top of the pot and leave to cook.
When the pasta rises to the surface, drain.
Melt the butter in a frying pan and add the pasta. *You can toast the pasta to taste.
Add pepper and Parmesan and stir.
And now it's ready!
