I MADE A LEMON MUG CAKE IN JUST TWO MINUTES THAT WAS SO EASY, MOIST AND DELICIOUS

Mug cake are great for those times you fancy a sweet treat but don't want to go through the hassle and mess of a full-blown cake in the oven.

A mug cake is a simple and convenient dessert that can be made in just a few minutes using a microwave.

It typically consists of basic ingredients such as flour, sugar, milk, and oil, mixed in a mug and then microwaved until it reaches a cake-like consistency.

The result is a warm, moist, and decadent treat that can be customised with various flavours and toppings to suit your preferences.

Having previously made a red velvet and carrot mug cake that tasted incredible, I wanted to have a go at a lemon mug cake that takes even less time than the other recipes.

Ingredients

One tablespoons butter

Two tablespoons milk

Two tablespoons lemon juice

Half a teaspoon lemon zest (for those who want a more intense lemon flavour)

One quarter cup plant flour

One tablespoon icing sugar

One quarter teaspoon baking powder

Dash of salt

Splash of vanilla extract

Method

I started by weighing out all of the ingredients and zesting and juicing a lemon.

I then picked out a large enough microwave-proof mug - look for one that comfortably holds 333ml for this recipe.

To the mug, I added the butter and placed it in the microwave for around 15 seconds.

Once melted, I swirled the butter around the mug, added in the milk, lemon juice, and vanilla and gave it a whisk with a fork.

Although the recipe instructs you to mix the ingredients in a small bowl before transferring it to the mug, I decided to just combine the ingredients in the mug right away.

I then stirred in the flour and baking powder. Make sure to stir well until completely mixed to ensure no lumps are left behind.

The recipe recommends microwaving the mixture for one to one and a half minutes. The timing of the mug cake will depend on the size of your mug and your microwave.

Be careful not to over-microwave. The top should be just set. In my 900W microwave, it is perfect at one minute 10 seconds.

Once the cake was ready, I left it to cool ever so slightly before topping it with some whipped cream and a light dusting of icing sugar.

Alternatively, you could top the cake with a glaze of icing sugar mixed with a few drops of lemon juice.

Going in for the taste test, the sponge was incredibly moist and full of flavour for something that took so little time to make.
